The meat of the Ibérico rib is firm because it is part of the musculature of the rib cage. That is why it has traditionally been used to cook in stews, stews, rice dishes,… since its texture is very soft and honeyed due to its high level of fat infiltration. This level of fats (mainly oleic acid), means that the result is also spectacular cooked alone: fried or grilled and simply seasoned with salt. It is traditionally prepared in many areas marinated with paprika, oregano and garlic; although you can experience with them the best marinades from international cuisines such as Mexican, Indian or Chinese.
